Yes, you can add just 1 card to your hand when only 1 or the other is revealed.
Q2: When the cards revealed from my deck with this card's On Play effect contain both Eosmon and Menoa Bellucci, am I allowed to add just one card to my hand?
No, you can't. You must add as many cards to your hand as possible.
Q3: When I use this card's inherited effect to digivolve into Eosmon in my hand, can it digivolve regardless of its digivolution requirements?
No, this card's effect does not allow ignoring digivolution requirements, so you can only digivolve into a card that meets the digivolution requirements.
